We all have our favorite comfort foods like mashed potatoes and macaroni and cheese. But they’re not exactly the healthiest of options. However, there are some simple swaps you can make using vegetables. You’ll up the vitamins and won’t even miss the extra calories!
Cauliflower is a fantastic substitute that can lower fat content. Puree cooked cauliflower and replace half of the cream in your favorite dishes. You’ll still get the rich, thickness you’re looking for. But you’ll also get a boost of vitamins and extra flavor. Try it in cream soups or country gravy and see for yourself!
Cauliflower is also an excellent swap for potatoes. Steam it until tender and use it as a replacement for mashed or diced potatoes. You can ease into using it by replacing half of the potatoes. Add some roasted garlic or sour cream if you’re not a fan of cauliflower’s taste but still want the benefits.
Macaroni and cheese is a favorite, and you can make it a little healthier with butternut squash. Roast the squash and puree it. Then replace some of the cheese. You won’t even know it’s there, but you’ll sneak in some extra nutrients.
